Golden Vetkoek

Crispy on the outside, soft on the inside – vetkoek is the golden bite that never fails to bring a smile.
Ingredients:
7 cups Baker's Dream Cake Wheat Flour
2 cups Water, Lukewarm
¼ cup White Sugar
2 tsp Salt
3 cups Oil, for frying
1 x 10g packet Instant Yeast
Method:
In a large bowl, sift together the Baker's Dream Cake Wheat Flour, sugar, salt, and instant yeast.
Add the lukewarm water gradually, mixing to form a dough.
Knead until the dough is smooth and elastic, about 5 - 7 minutes.
Cover the bowl with a cloth and let the dough rise until doubled in size, about 45 minutes.
Pinch off pieces of dough into tennis ball sizes. Roll each piece until smooth, and flatten slightly with your hand. Place on a floured surface and repeat with the remaining dough.
Heat the oil in a deep pot.
Fry 2 - 3 pieces at a time until golden brown, about 3 minutes per side. Remove and drain on paper towels.
