Lentil and Veggie Bake

Hearty, healthy, and done in just one dish!
Ingredients:
1 ½ Cups Green Lentils, uncooked
1 Carrot, finely chopped
1 ½ Cups Potatoes, peeled and chopped
½ Cup Frozen Peas
1 Celery Stalk, chopped
1 tin Chopped Tomatoes
2 Garlic Cloves, minced
1 Onion, chopped
Salt and Pepper, to taste
2 ¾ Cups Vegetable Stock
2 Cups Cheese
½ Cup Mushrooms, sliced
Method:
Preheat the oven to 200ºC.
Rinse the lentils and add to an oven-safe baking dish.
Add the vegetables, garlic, seasoning, vegetable stock and tin of tomatoes. Mix until combined.
Cover the dish with foil. Transfer to oven and bake for 1 ½ hours, stirring once in between.
Remove from oven. Remove the foil and add cheese on top.
Place dish back into oven and bake uncovered for 15 minutes.
Remove from oven and allow to cool before serving.
